Vegetarian fare for meat lovers

It is not that easy to go vegetarian all the way, but there are some tasty and filling recipes that can make it less of a sacrifice.

It is natural to crave juicy meat dishes, and you can indulge in that craving without eating real meat by trying these delicious vegetarian alternatives to your favorite meat dishes.

Nutburger

2 eggs
1 cub shredded cheddar cheese
1 cup toasted germ or cooked rice
3 stalks minced celery
1 cup finely chopped parsley
1 minced onion
1 tbsp basil
1 cup finely chopped walnuts
1 finely chopped red or green pepper
2 tsp curry powder
1 tsp salt

Mix and mash all ingredients together in a mixing bowl and form them into burger patties. Pour olive oil in a skillet, just enough to cover the bottom of the pan. Drop the patties and cook until golden brown. Serve them on buns just like regular burgers, complete with lettuce, onion slices, tomato, and pickles. (From: http://eartheasy.com/eat_vegetarian.htm)

Vegetable fajitas

Ingredients:

1 onion, stripped
1 red, green, and yellow bell pepper, stripped
8 ounces sliced mushrooms
1 minced garlic clove
small broccoli crowns
2 tbsp chili powder
6 tbsp olive oil
3 tbsp limejuice
lemon pepper
fajita seasoning
flour tortillas

Combine the peppers, onions, garlic, and mushrooms in a bowl and mix slightly. Mix the oil, limejuice, chili powder, fajita seasoning, and lemon pepper in a separate bowl before pouring it over the vegetable mixture. Stir them together and set aside for an hour or more.

After marinating, heat a frying pan and stir-fry the marinated vegetables for five to six minutes. Fill the tortillas with the cooked vegetables and garnish with guacamole, salsa, sour cream, and picante sauce. (From: "Vegetarian: The Greatest Ever Vegetarian Cookbook" Edited by Nicola Graimes)
