Ice Cream Maker : What is it?

An ice cream maker lets you make home-made ice cream through the process of cooling the mixture and constantly churning the mixture to break up ice crystals, forming a smooth and creamy texture.   The ice cream maker can either be manual or electric.

Kinds of Ice Cream Makers include the following:

Manual

A manual ice cream maker has an inner bowl that sits in a larger outer bowl. The inner bowl has a hand crank that turns a paddle or a dasher to stir the mixture. The outer bowl is filled with salt and ice to provide the cooling power. The salt causes freezing-point depression; its heat of fusion allows it to absorb the heat from the mixture, causing the ice cream to freeze.

This machine is relatively inexpensive but is messy and tedious. Some manual machines have pint-sized bowls with walls filled with a coolant-- the mixture is poured in the inner bowl and placed in the freezer-- and the paddle is turned every ten minutes until the desired consistency is achieved.

Electric

An electric ice cream maker has an electric motor that drives the bowl or paddle to stir the mixture. There are three types of electric ice cream makers: the counter-top machine, the small freezer-unit machine, and the mini freezer machine.

The counter-top machine has a double-walled bowl with coolant in between the walls. The bowl is frozen up to 24 hours before the machine is used; once frozen the bowl is placed in the machine, the mixture is added, and the machine spins the bowl until the desired consistency is reached.    

The small freezer-unit machine sits inside the freezer of a refrigerator and operates like a food processor, only much slower. The paddles turn every now and then, to stir the mixture, and prevent large ice crystals from forming.     

The most expensive electric ice-cream maker has its own mini-freezer.  The machine is switched in for five to ten minutes before it is used, to prepare the cooling system.  The mixture is then added and the paddle is switched on to churn the mixture; the ice cream is ready in about 20 to 30 minutes.
