Griddles are great for grilling or frying food like omelets, pancakes, or steaks on stovetops. The traditional girdle is a circular plate with semicircular hoops at both sides that form a central handle. Modern griddles are rectangular and have short side handles. Bigger griddles cover two stove burners, and have wide surface areas for grilling several food items at once. Some newer griddles are now electric.

Electric
An electric griddle is a flat pan that attached to a heat source similar to a hot plate. It is plugged into an electric outlet. Most Electric Griddles have temperature control knobs for controlling the heat. They are commonly used for indoor grilling and are ideal for cooking tepanyaki and other Japanese dishes.
Gas
A gas griddle is a simple flat pan placed over a stovetop. It can be wide enough to cover two burners for frying or grilling more food at one time.
Choosing Griddles (Buying Tips)
Maintenance: Choose an easy to clean griddle. If you want to get an electric griddle, choose one that can be detached from the heat source so you can clean the used plate separately and more thoroughly.
Surface: Choose a ribbed griddle surface if you want to remove most of the fat from your food. Only a little oil is required when using a ribbed griddle. It also displaces the fat from meats and channels it to the outer rim. If you plan to make omelets and pancakes only on your griddle, choose one with a flat surface.
