The newest breakthrough in sharpener technology, the Chef's Choice M130, presents all your sharpening options in one compact appliance. It professionally sharpens, steels or strops all brands and types of knives; straight edge or serrated, kitchen, Asian style, sports and pocket knives in seconds.
Chef's Choice three stages make it possible to obtain a "better than factory" edge quickly and effortlessly:
Stage 1, using 100% diamond abrasives, sharpens the edge
Stage 2 is a super-hardened miniature steel that develops a shaving sharp edge with ultra-sharp microscopic teeth, providing a superior edge "bite"
In Stage 3, a revolutionary flexible stropping disk polishes the edge to hair-splitting sharpness. Using these stages in different combinations produces custom edges, suited to a particular cutting task.
Built-in, high precision, user friendly elastomeric angle guides guarantee fool-proof sharpening

Rating : Excellent device - Jerry D. Eisner, Apr 23, 2008
This product does quickly what no other device has done for me before. It truly sharpens knives to a fine honed edge in just a few seconds, with very little skill required and a short learning curve.
Purists will still want the kind of shape and edge that a stone will produce after many minutes of careful (and often unsuccessful in my hands) work. But this product has been well thought out, seems pretty sturdy and it works. Large thick blades may not fit well.
It allows you to get two types of edge. One is a smooth, finely honed edge that cuts very smoothly. I don't prefer that. The other is also a finely honed edge, but there is just enough irregularities on the edge to give a momentary sawing action as it starts to cut. I am not enough of an aficionado to have different knives with different types of edges. I prefer the "bite".
There are a couple of ways to know your knife is well honed. Look at the edge while holding the blade directly perpendicular to your line of vision. A well-honed edge will not reflect any light, because the edge is actually thinner than the wavelengths of visible light. The other way is to touch the edge to your thumbnail and try to pull it sideways (NOT in a cutting direction) across the nail. If it is dull, it will slide. If it sharp, it will "stick".
The Chef's Choice M130 achieves that level of sharpening in moments.
Rating : Great sharpener - Doreen Contino, Apr 13, 2008
I bought the sharpening station because it was highly rated by cooks illustrated. It is a great piece of equipment, I have expensive knives and want to keep them sharp without damaging the blades, this did the job. My husband noticed immediately how sharp the knives were. I highly recommend it, I just read the instructions first and practiced using a cheap knife and the results were amazing.
Rating : Very sharp! - Andrew G., Mar 24, 2008
Easy to use, sharpens all types of knives quickly. Read the instructions and don't over sharpen!
Rating : Hidden defect - Bad John, Mar 15, 2008
I was very disappointed when I tried this out, it performed poorly. I could get a knife sharper, faster myself, manually.
I put it aside after the holidays and just tried it again. I realized that one problem was the middle sharpening station (#2), nothing was happening. It was almost impossible to see anything, but with a very bright light and glass, I could see that there was nothing at the bottom or sides of the guides, no stone, no steel, no disc. Manufacturing mistake, wrong model? I don't know. Past 30 days, I can't return it and no luck with chefs choice. Buyer beware.
Rating : Broght our J.A. Henkels Pro S back to Pro Sharpness - M. Ledbetter, Mar 04, 2008
Our J.A. Henkels Pro S knives started out being very sharp. Sharp enough to cut tomatoes effortlessly. And to keep them sharp we bought the J.A. Henkels Twinsharp Knife Sharpener. But over time we have noticed the edge becoming rough and not nearly as sharp or easy to use. Not to mention the "nails on a chalkboard" feeling every time you pull a knife through the sharpener.
So I read the reviews here and decided on the Chef's Choice M130 Platinum.
We got it today, and I read the instructions, which some called not so great, and easily and effortlessly returned our J.A. Henkels Pro S to professional sharpness! They may even be better than the originally were!
I even sharpened my Gerber multi-tool knife which has a 2" blade. It is now razor sharp, better than new.
We are VERY satisfied with this sharpener and highly recommend it.
